A Devil of an Egg

This is one of my favorite low fat, high protein snacks. I think I originally found it in The Zone Diet book or perhaps on the Zone Web site. With just two simple ingredients, this is a snap to put together and can even substitute for a main entry for lunch or dinner.

Ingredients:

  • 2 hard boiled eggs, chilled and peeled
  • Hummus (flavor/variety of your choice)
  • Slice the hard boiled eggs lengthwise and discard the yolks. Fill the voids left by the yolks with hummus, and enjoy!
