Low Carb
December 27th, 2005 by cindy wrightA lot of people are truning to low carb diets as a way to lose those extra pounds. You need some carbs in your diet to get the proper nutrition. So don’t put you body and health in jeopardy by going no carb. But I do have a couple low carb recipes that taste delicious and are healthy.
Baked Soy Lemon Chops
The longer you marinate your pork, the better it tastes. And it’s baked, so a lot of the pork fat is baked right off!
INGREDIENTS:
1/2 cup soy sauce
1 tablespoon Worcestershire sauce
4 cloves garlic, minced
2 tablespoons lemon juice
1/2 teaspoon ground black pepper
1 teaspoon vegetable oil
4 pork chops
DIRECTIONS:
In a shallow dish, combine soy sauce, Worcestershire sauce, garlic, lemon juice, pepper and oil. Add pork chops, and turn to coat evenly. Cover, and refrigerate for at least 1 hour.
Preheat oven to 375 degrees F (190 degrees C).
Place marinated pork chops in a roasting pan, and bake in preheated oven for 35 to 40 minutes, basting meat often with marinade.
Low Carb Cheesecake
You’ll have a hard time believing this cheesecake could be both low-fat AND low-carb.
INGREDIENTS:
1 (8 ounce) package fat-free cream cheese
1 (15 ounce) container part-skim ricotta cheese
1/2 cup fat-free sour cream
3 egg whites
1 tablespoon all-purpose flour
1/2 cup granular sucrolose sweetener (eg. Splenda™)
1 teaspoon vanilla extract
DIRECTIONS:
Preheat the oven to 325 degrees F (165 degrees C). Grease a 9 inch pie plate.
In a medium bowl, mix together the cream cheese, ricotta cheese, sour cream and egg whites until smooth. Stir together the flour and sugar substitute; mix into the cheese batter along with vanilla. Pour into the prepared pie plate and smooth the top.
Bake for 60 minutes in the preheated oven, or until the top is nicely browned. Cool completely before slicing and serving.
