Stick it to ‘em
June 6th, 2007 by EmilyI am not a cook. Sometimes I bake, but the extent of my baking usually involves the cookies that you pull apart, place on a cookie sheet and put in the oven. They taste great, but the most credit I can take is spacing them just right so that they don’t grow into each other. Which I guess is something to be proud of.
Anyway, despite all that, I do make a lot of effort to eat well. Now that it’s summer I love being able to grill out (and by grill out I mean watching my boyfriend grill while I have a glass of wine). Grilling adds a lot of flavor and it’s very easy to do it in a low-fat way. Between marinades, non-fat cooking sprays, healthy oils and spices, you can make pretty much anything taste good. One of my favorite things to do (all by myself!) is use skewers, which are inexpensive and available in most grocery stores. Recently I made several skewers with red bell peppers, onions, mushrooms, zucchini and tomatoes as a side dish for dinner. The only preparation required was soaking the skewers in water for at least 30 minutes, cutting the vegetables and spearing. And they looked pretty! Almost like I knew what I was doing! Admittedly, my boyfriend did the grilling and the spraying/seasoning of the skewers, but at least I contributed something besides setting the table. And that was definitely something to be proud of.
