Tonight’s dinner was frito pie. I thought OH NO, I don’t want to fall off my “diet” already. I had to think of a way to make it healthier for myself. So, this is what I did:
Got a bowl and filled it with romaine lettuce and tomatoes. I added in pinto beans, red chile and fiesta cheese. It was so delicious and so much healthier than loading up on frito chips and putting extra cheese.
I was able to convert this “frito pie” into a healthy taco salad. I had two servings and each time I put a ton of veggies on the bottom. I would make eat this for dinner more often, pretty good last minute invention.
Best of all? It was Southbeach Diet friendly~!
