I like making a bunch of these, putting them in the fridge and warming a couple on my way out the door. I highly suggest using silicon muffin pans as the quiches do not stick to the sides or the bottoms. Its nice to have quiches that just pop out easily.
In a large bowl, use a blender to mix:
Eggs, creamed spinich, green chile and cheddar cheese. Blending them makes them light and fluffy.
If you like onions (which I don’t) you can add those in. Other people enjoy putting artichokes, asparagus, or other veggies. Mushrooms would also work.
Add in your favorite seasonings and blend.
Pour the egg mixture into each of the silicon muffin pans. Top each one with shredded cheddar cheese.
Set your oven to 350 degrees and about 15min later you’ll have a whole batch of quiches ready for breakfast the next day!
