			<content:encoded><![CDATA[<p>Everytime I stop at a natural food place, I pick up a couple cans of pinto beans and black beans in case I need to use it one day in the future.  I also have butter beans and kidney beans in the pantry awaiting me as well if I ever use them.</p>
<p>Tonight, for example, I knew I was tired of sandwiches and pasta and eggs, so I thought I&#8217;d pull out a can of pinto beans instead.  Of course this is a great vegetarian way to get some good protein in, not to mention, fiber!  So I put half of the can in a bowl and half in a container with a lid for another time.  I heated up the bowl of beans.</p>
<p>When the bowl of beans were done, I added shredded cheese and mexican hot sauce.  I used my whole wheat tortilla as a &#8220;spoon&#8221; and ate away.  Oh yeah, I also added lite salt.</p>
<p>I prefer green chile or even red in my beans but I don&#8217;t always have that on hand, just like I don&#8217;t always have a crockpot of freshly made beans on hand either!  So I do carry Mexican hot sauce (not like Louisiana hot sauce!) in the fridge.  The one I have is called Valentino or something like that.  You could also use salsa or green chile salsa if you want.  I don&#8217;t like onions so that wouldn&#8217;t work for me.</p>

<p>SB breakfast burritos:  These are really small, the tortillas are soggy and there are peppers and onions which I don&#8217;t like.  Thumbs down but will eat if there is nothing else.</p>
<p>SB chicken ceasar wraps.  These are pretty good.  It inspired me to figure out how to make it on my own.  To not freeze, the jello gets wierd</p>
<p>SB chicken, cranberry, mayo, pita chips.  I LOVe this meal so much.  I would eat it everyday if it were cheaper.  SO filling and convenient.  Also comes with jello</p>
<p>SB lunch meats.  Eh, the same as any other lunch meat</p>
<p>SB Balsamic Vinegar dressing: Pretty good</p>

<p>I began by snacking on a pomegranate apple sauce, no sugar added, while preparing my meal.  This is full of antioxidents and is SO good!</p>
<p>In a bowl I put romaine lettuce, shredded carrots, a bit of cabbage, grape tomatoes, sunflower seeds, sprinkle of lowfat bacon bits, and shredded cheese, all topped with italian dressing made with real olive oil.</p>
<p>In a whole wheat tortilla, I added pepperjack cheese, canadian bacon, and shredded turkey.  I melted it in the microwave, added some mustard inside and that&#8217;s it.</p>
<p>I ate all this with some diet raspberry tea and it was a good meal.</p>

It&#8217;s not that unhealthy Adkins!  Here&#8217;s how you could make yourself a bowl of pasta that is nutritious and has three of the five food groups: Whole Grain, Veggies, Cheddar.  I should also mention that it is vegetarian.  No, I&#8217;m not vegetarian but once in awhile its good to have a non-meat meal.</p>
<p>Boil a pot of water.  Add salt.  When its boiling, add in whole wheat rigatonni (sp?)<br />
Defrost and warm some frozen veggies like carrots and broccolli.<br />
16 after the pasta has been boiling, remove and add to the veggies<br />
Stir in some no sugar added sauce, any kind that is your favorite.<br />
Top with shredded cheddar cheese, stir<br />
And EAT!</p>
<p>That was my dinner.  I thought of adding in chopped tomatoes but I decided to make the whole dish a warm one instead and the juice of tomatoes can sometimes make the meal watery.  The sauce I used also had sundried tomatoes.  Did you know tomatoes are a great source of lycopene?</p>

			<content:encoded><![CDATA[<p>I like making a bunch of these, putting them in the fridge and warming a couple on my way out the door.  I highly suggest using silicon muffin pans as the quiches do not stick to the sides or the bottoms.  Its nice to have quiches that just pop out easily.</p>
<p>In a large bowl, use a blender to mix:<br />
Eggs, creamed spinich, green chile and cheddar cheese.  Blending them makes them light and fluffy.<br />
If you like onions (which I don&#8217;t) you can add those in.  Other people enjoy putting artichokes, asparagus, or other veggies.  Mushrooms would also work.</p>
<p>Add in your favorite seasonings and blend.<br />
Pour the egg mixture into each of the silicon muffin pans. Top each one with shredded cheddar cheese.</p>
<p>Set your oven to 350 degrees and about 15min later you&#8217;ll have a whole batch of quiches ready for breakfast the next day!</p>

<p>Got a bowl and filled it with romaine lettuce and tomatoes.  I added in pinto beans, red chile and fiesta cheese.  It was so delicious and so much healthier than loading up on frito chips and putting extra cheese.</p>
<p>I was able to convert this &#8220;frito pie&#8221; into a healthy taco salad.  I had two servings and each time I put a ton of veggies on the bottom.  I would make eat this for dinner more often, pretty good last minute invention.</p>
<p>Best of all?  It was Southbeach Diet friendly~!</p>

<p>Spread lite cream cheese on whole grain bread, top with English cucumbers and sundried tomatoe.  Slice in triangles.</p>
<p>Take a bowl and fill it with frozen berries.  Sprinkle Splenda on top.</p>
<p>Put all of this on the table for your guests, as well as nice china to serve themselves with.</p>

I have some marinated lemon butter chicken sizzling on the stove while I&#8217;m snacking on fresh berries.  Yes, berries should be introduced in Phase II but I&#8217;m making my own Phase since I&#8217;m breastfeeding.  It&#8217;s sort of a Phase I &amp; 1/2.  I might spray some Splenda on them.</p>
<p>After my yummy lemon butter chicken is cooked thoroughly, I&#8217;m gonna cut it in strips and place over a salad of romaine lettuce blend with grape tomatoes.  I&#8217;ll top it all off with a dressing made from 100% olive oil, it&#8217;s italian.</p>
<p>If I&#8217;m still hungry I might make a 1/2 a whole wheat tortilla quesadilla with shredded fiesta cheese, topped with a slice of real avacado.</p>
<p>Sounds yummy!!</p>
<p>Oh and I have a diet Snapple for a drink.</p>
